Last night Collin and I had some friends over for dinner, so I welcomed the excuse to make dessert! We ate shrimp kebobs and fruit salad out on our patio. And this cobbler I’ve been craving was the perfect ending to a fun evening. The recipe is from a friend of the family, it’s super easy, and you can make it with literally any fruit you want. I used blueberries this time, but another favorite is with fresh peaches. Serve with a big scoop of vanilla ice cream and enjoy!
Betty’s Blueberry Cobbler

- 1 3/4 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2/3 cup sugar
- 1 cup milk
- 1 stick butter
- 4 cups (1 lb) of blueberries or other fruit
Directions:
Heat oven to 350 degrees. Place stick of butter in 9×13 pan and place in oven to melt. Mix first 6 ingredients and pour melted butter into mixed batter. Pour batter into pan, place fruit on top of batter – about 4-5 cups fruit (you can use blueberries, blackberries, peaches, etc.) Sprinkle 1/2 cup sugar over berries, pour 1 1/2 cups water over top. Bake 40-45 minutes, or until top is brown.
